This is such a classic combination of flavors that work so well together, beef, onion, mushrooms, YUM! Also, the secret, baking soda and cornstarch, especially the cornstarch creates that velveting in Asian cooking, makes it sooo tender a yummy! 😊

When my mushroom hating kid leaves for college in 2 weeks, I’m making this. 2 weeks later: I made this and it was amazing! I only added a bit of Chinese cooking wine to the sauce. We ate it as left overs a few nights later and it was still fantastic.

I made this tonight. I had to substitute rice flour for corn flower which worked out fine. My Chinese wife said "This is real Chinese food", so it passed her test. Will definitely add this recipe to the mix.

Wow! Fabulous and very flavorful. I did do some modifications, I like my meat not to be thoroughly cooked, so I used chunks of beef tenderloin. I cooked the mushrooms first, as I like them cooked more, took them out, then cooked the veggies until just starting to soften, took them out, then seared beef and when I flipped the beef, added back all the veggies and sauce. Incredible! So far, everything I cooked from Marion has been great. I love the strong flavors. Thank you

Yum! The tried and proven technique of softening the meat or ' milking' (as some Asians add a smidge of water to the baking soda and cornflour so it looks a bit milky) is a wonderful way of tenderising the protein and giving it that eye pleasing sheen. As any good chef will agree, we do a lot of eating with our eyes to begin with!

@@ributsuria velveting is a little different from simply marinating meat in baking soda and cornflour. This is simply tenderising and can be achieved in other ways too (e.g. pineapple juice, pounding, etc.). Velveting includes a flash fry before using the meat in a stir fry.

@@jacknoonan9172 Velveting is the major term for when you marinate it in cornflour ( being the key ingredient when you are velveting meat) , egg, baking soda , salt , msg, sugar, soy and other seasonings etc before cooking. "Oil-blanching", "Oil-velveting" or "passing through oil" is the proper term as you described earlier as when you flash fry the velveted meat in enough amount of hot oil to cover the meat. There is also the technique of "water-velveting" where you marinate the meat with cornflour and other seasonings as usual then you blanch the velveted meat in boiling water with a little bit of oil added to it.

@@jacknoonan9172 On the contrary, Marion DID the velveting of the beef strips. Please check 1:18 to 2:07 timestamps of her cooking video. She added the cornflour, baking soda and other seasoning while it marinates . This would give a shiny, soft velvety texture on the cooked end product while locking up the meat juices within later. Then she seared the velveted beef strips with the other ingredients in the hot pan( 4:48 to 5:16 ) , to save some time and less oil waste. Healthier too 😊... On a side note, adding a little amount of baking soda to the meat , not only helps breaking down the proteins. It also aids in creating a better Maillard reaction by raising the pH values of the meat. Hence it gives you nice tastier brown bits. Just a little amount of baking soda will do the job or it will give you a bitter tasting product if you put too much. 😊

I made this recipe and I made a few mistakes which I want to share with all of you so you don't end up making them also. 1- I put too much corn starch and it made the whole dish too starchy and very heavy on the stomach. So, be extra careful with the corn starch quantity. 2- I eyeballed the quantity for the stir-fry sauce and I ended up not having as much as she did. More would've been better. 3- After adding the stir-fry sauce, I kept cooking the pan for 2-3 more minutes, which evaporated too much of the sauce. Watching this video again, it looks like she takes the pan off heat very shortly after adding the sauce. I'm excited to make this dish again and to fix my mistakes :)

I have a 99-year-old client who, for his entire life, hated mushrooms and would never eat them. Not knowing this, I made a beef mushroom dish somewhat like this and he ate every single bite. His daughter said if she hadn't seen it she would never have believed it. Miracles can happen!

I've made this dish twice now. The first time I followed the recipe exactly and it was way, way, too salty. The second time I marinated the beef in an egg white and corn flour and omitted the soy sauce from the stir fry sauce. Much, much, better results.

I love Marion's cooking videos, however, I often find inconsistencies between the video and the recipe on the website, which can be frustrating. There'll be just one or two little things that aren't the same, which confuses me. I don't know if it's done intentionally but I'd really prefer if the ingredients and methods are exactly the same as shown in the video. That's just my personal feedback. Thanks.
