Tried adding the bi-carb and cornflour last night and it did make a difference. Even using the pre-cut stir fry beef, which is typically tough because it's cut too thick and not always across the grain, it became noticeably tender. Good tip.

Tried this today. I didn't have all the ingredients. Skipped the rice wine, didn't have dark soy. And added black pepper powder instead of white pepper powder. Turned out sooooooooo great. Juicy and tender. Sooooooo delicious!!!! Thank you so much.

I've been seeing your videos for a couple of months. Today I went to a chinese grocery in Copenhagen and got the right ingredients. I used ribeye steaks from veal, and It was so delicious. The meat was very tender and had a velvery, soft texture - my family loved it. I'm definitely going to have this on my cooking list and also try other of your recipes. This looks easy and delicious. I know how to cook beef, I consider myself an expert at cooking my beef ^_^ your technique is pretty much what I use as well. But I swear the beef in Chinese food menus have different level of tenderness. Like It doesn't get tough even after you put it in the fridge, then warm it up, then put it back in the fridge again for the second day, and warm it up again the next day. I'm suspecting they don't stir fry their beef right away like you and I do. There's got to be a step before that.

There is a type of 'oyster sauce' that's made with mushrooms instead of the oyster extract. Most Asian grocery stores have that one or have a look online :-)
