At around 10:40 you add in the dimensions as a filter - Is there a way to edit the list of Measure Names shown in the filter? (So for example, in your filters, is there a way to remove "Count of People"?) I have a lot of measures I need for analysis that are unnecessary when presenting to a client and would like to only include the relevant ones.

Yes - You'll need to right click on the measure and choose to 'hide' it from the data source pane. This is the only way to prevent measures from being displayed.

Is there a way to edit "DIM A" to dynamically update to whatever is selected from the "A - Swap" filter? So for example, if you have Region selected, it would say 'Region' in place of 'DIM A' at the top of the first column, and then if you switch A- Swap to 'Region' and the top of column one would change to 'Region' ... Similarly to how the title dynamically updates?

The only way this would be able to be accomplished would be a bit whacky and involve floating worksheets to display dynamic parameter values over the existing Table header. I would not recommend this approach to ever be productionalized on Tableau Server.

In a worksheet, using a table visual, it's easy to go to -> Analysis -> Percentage Of -> and then choose how to display a percent of or none with respect to your data. Is there a way to give this versatility in a dashboard as well? Thanks!
