He dry roasted them and in the end he just coated each side of the Parantha with about a half tea spoon of butter. That is why it's not oily.

Gloves are for serving purpose only using gloves while cooking on flames is not a good option as gloves are made up of plastic and it melts with high temp. Mentaing personal hygiene is sufficient

These stalls are small wender's shop they don't have sufficient money to have their own food asking them for such requests and even don't want to pay more.......
