What an impressive farm. I lived up in Sconny 40 years. Moved to NM in 95 and then to mexico in 2006.. Coming home for good in spring. Wisconsin rocks regardless of those cold winters. Because of things like this.

Festival, whole foods, on their site you can see where they distribute the salmon too.

I would like to hear what they are actually feeding these fish. Salmon are mainly piscivorous. No veg material will replace that

30% marine based ingredient and 70% soy protein, poultry by products, canola oil, wheat flour, corn gluten. many are adding in 10% insect protein to replace the marine and plant portion

We live near Hixton, & I've worked at 3-4 different Greenhouses, so I was checking out Superior Fresh. I wouldn't really call it a "greenhouse", it's not like any operation that I've ever seen.

That’s an amazing operation! Please please please reach out to Tom Eggert in Madison, WI for a UW-Madison and the MREA Festival for field trips or creating some sort of course work. The guys at Blue Honey Bio-fuels would also be super game for any involvement that made sense. I don’t remember the name of the farm, but they fed the fish guts to pigs, and then finished them with a 3+ weeks on an orchard. The fasting of the salmon was particularly fascinating

Love the salmon. I wish Superior Fresh would sell whole fish, so we can bake and broth them. Fillets are wasteful of much of the fish. That's not the SF way.
