I hope the MRI gets to the root of the problem Ryan. If it’s a herniated disc with a pinched nerve the injections might help a lot. I waited 3 years before I did anything about my pain because I was so young. I had discs that were a bit degenerated because of it so I had to have a microdisectomy. Also there are some medicines your doctor can give you to relieve the inflammation on your sciatic nerve!!

I searched up the description of what Matt ate and came up with a dish called Thịt Đông. I'm not Vietnamese so take this information with a grain of salt, but it traditionally served during the new years and contains different parts of the pig, wood ear mushrooms, and various spices, all sealed in gelatin. Seems like it could be this one or the dish you stated.

@@renewu3250 hmm I’m not very sure if that could be it... I think what is getting ppl is that Matt described the dish to have rice jelly but I don’t think it’s rlly jelly. I believe that he’s actually trying to describe the rice paper/roll. It’s pretty similar consistency to the noodles you’d see in like Thai Drunken noodles. I’m only somewhat certain it could be Banh Uot because he described it being served with cucumbers and ham (which I believe could be Cha Lua/Vietnamese sausage), and covered in a clear sauce which is likely Nuoc Mam (fish sauce), which I typically put in my Banh Uot. Then again I’m not so sure but I appreciate the effort you went into looking for the dish as well hahaha

I thought he said something along the lines of jelly like aspic but seems like I was mistaken, so it seems like he was describing Banh Cuon. I've had rice noodle roll dishes that are somewhat similar and they were great, but I can definitely see why someone like Matt who had little experience with more traditional Asian food back in South Carolina might find it appalling.

If Matt truly wants to try fermented herring, here are some tips from a Swedish person: open the can inside a plastic bag, as it will prevent any liquid from splashing onto you; do not eat the fish as it is, you need to remove bones, fins and the innards; cut it up into smaller pieces and eat it with boiled potatoes, finely chopped red onions, sour cream, and some finely chopped dill or chives.
