What a nice gift for the Bossman! Grandpa is quite the instructor. Em and Jade, how blessed you are to have such a loving nurturing family. With their unlimited wood supply, I would take a couple of 10" wide 8/4 boards (kiln dried of course), and laminate them instead of fooling around with the rotten bottom of that one. Lamination will also help in preventing warping, Happy woodworking!

Em, I've been making cutting board for 20 years or more and have found the food grade mineral oil makes a great finish, I normally put 3 to 4 coats, letting them dry for like 24 hours between each coat, and tell my buyers when they get dull just rinse them off and apply another coat to enhance the finish !!

if you're still working on that, take a chisel and wire wheel and remove the rotted wood, then seal with an epoxy resin. That will be food safe and it will let you use that as the top of the board. That is a nice piece of lumber.

Its great seeing all the Lumber Capital Women working and a project for the Boss Man. A friendly suggestion for all the dads and grandpas out there. As my children and grandchildren are progressing through projects I support them by assisting rather than doing so that once they complete the project they can tell everyone they themselves did the project. This has been the case from changing the oil in their cars to kitchen remodels.

You are blessed to be able to use such a shop. Absolutely! wire brush & epoxy that back side to stabalise the piece of lumber. It appears you have a quarter-sawn piece; that pith center is not nearly as stable as rest of board, so epoxy will help with that, too. I also suggest a mineral oil - bees wax mix for your food-safe finish. See The Wood Whisperer's & Katz-Moses' latest food-safe finish KZbin videos...
