When I lived in Kyoto, okonomiyaki quickly became one of my favorite foods. I had never had katsuobushi as a topping before that, but it absolutely makes this dish. Along with the mayo and sauce, it's the perfect combination for savory comfort food.

It helped a lot that an Asian grocery store opened up half a year ago in my area, so getting a lot of ingredients are much easier now. I tried Okonomiyaki once when I visited Japan and it was amazing. So I decided to try and make one but it took me a while to gathered the necessary ingredients. Especially the onkono sauce and Japanese mayonnaise but fortunately I found a store that sells Japanese products. The results was amazing for my first time your video was so helpful thank you.

They are definitely similar. Only differences are takoyaki sauce is a little sweeter and thicker. I sometimes use takoyaki sauce for my okonomiyaki. It’s still delicious. So you can use them interchangeably. Thank you for the comment.😁

Just returned from Japan & while there I had okonomiyaki in Osaka for my 1st time. It was prepared with shrimp since I rarely eat meat and have to say it was the most delicious satisfying comfort food I've had in awhile. My recipe is also Osaka-style Okonomiyaki. One of the key characteristics of Osaka style is that we use lots of cabbage. You might feel hesitant about adding so much cabbage to your batter, but that's how it's supposed to be. Even though many foreigners call it a Japanese pancake, we consider cabbage to be the main ingredient of Okonomiyaki.😊

I like to use Napa cabbage for this recipe. I am fortunate to have a good Asian market that sells miniature Napa cabbages at certain times of the year. One is the perfect size for this recipe. I know this is not traditional, but I prefer to use non-sliced pork belly, cut into tiny cubes, and cooked until crispy ahead of time, which I then mix into the batter. It adds a nice texture and makes the fritter easier to cut than with the strips of meat.

Wow thank you very much for sharing, this is one of my favourites too, just wondering if you know the protein content of that flour as it just may be called something else in another country. Also what brand dashi powder do you use.. I will definitely give this a try very soon.

Cake flour in Japan and the US contains about 7-9% protein. And all purpose flour contains 10-12% protein. Cake flour is plain wheat flour with finer particles and less protein content compared to all purpose flour. And for Dashi powder, I usually use Hondashi Instant Dashi. I hope it'll help. Do you add shrimp, eel or octopus into the batter? Long time since I was in Japan and there are two styles. I was told, pancakes how you like. Any other items to add? Hiroshima style or Osaka?

If you include those in the batter, your Okonomiyaki won't set properly. So, if you want to add, I suggest adding them on top of your Okonomiyaki. 😊

Yes! I make mine only with gluten free flour and it works just as well. I use Bob's 1 to 1 baking flower.

I’m a new subscriber to your channel and was amaze how delicious and easy to make your recipes. However in this recipe you use pork. I do not eat pork. Can I substitute other meat instead?

Yes, you can. But please make sure to slice it thinly otherwise the meat won't cook thoroughly. And, I recommend using relatively fatty part of meat. Fattier meat makes Okonomiyaki tastier. Thank you so much for subscribing to my channel. 😊

I've had this in Hiroshima, their style! So now I'm going to make your original version tonight. I'm going to have to guess how the tempura bits are made, but that should be straight forward🥴, I hope! I'll let you know how I get on. Well I did it, and it turned out vey well. Not having Kewpie mayo', I followed your instruction, I have to say this was the least successful part, as it was too runny and not very rich. Maybe adding an extra egg yolk could help it in future? I particularly liked your suggestion of mixing most ingredients in a bowl beforehand. All I have to do now is practice the 'flipping-over' -a required art!

@@sushibykunihiro7534 I put shrimp in for the protein, fine without. Your okonomi sauce recipe is so much better than the bottled. I always make my own mayonnaise and did what you said to make it Japanese - saki and soy sauce.

Actually people started to add nagaimo in recent years. Okonomiyaki is still enjoyed without Nagaimo in Japan. I love nagaimo itself, but I'm not a big fan of nagaimo in Okonomiyaki since the inside remains a little soggy.

Do Japanese ppl ever mix up the pancake ingredients? Like adding bits of meat, green onion, etc? I bought the katsuoboshi grinder and a couple expensive extremely hard fish, so far I stink at grinding it..I just make “fish dust,” but the miso soup I made with the dashi I made from it was the best tasting I ever made..
Yes, you can. Beef makes delicious okonomiyaki too.😊

angie definitely click on the description found top right it's called a couple things like the three dot menu or the meatballs menu n well this is a cooking show sooo I thought the meatball menu was cute but nonetheless now you know what it is n where to find it.... I'm hungry again so I'll heat-up my homemade frozen dumpling-guys n the crunchy chili oil umami-bomb dipping sauce, recipes are great but tasting n creating a sauce you can't live without is priceless!!... (well for me n other's of us....)
