The flesh of tuna is kind of breakable and sensitive so I never wash it with running water. Instead, I always wash the salt off in very cold water. And, I simply don't recommend eating it right after you wash off the salt. It tastes much better after resting for 30 mins. You don't need to freeze tuna. Once it's frozen and defrosted, the flesh becomes very soggy and the color turn bad quickly. Usually, tuna doesn't carry dangerous parasites such as Anisakis. Thank you for watching.😊

The chef knife I use in most videos is sold at MTCKITCHEN.COM. The name of the knife is Ikkaku Donryu Molybdenum Gyuto . That's the knife I usually use to fillet fish in my videos. The other knife I use when I slice fish for sushi is called Yanagi knife but I don't remember which brand I bought. I think it was a little more than $150.00. If you spend a little more than $100.00, you can get very decent knives. No need to buy super expensive ones which cost more than a few hundred dollars. Those are for pros and require everyday maintenance, which I don't recommend for home use. And about brown rice sushi rice, if I try making sushi rice with brown rice, I would add a little bit of sweet rice ( mochi gome) to brown rice and cook. Because the grains of brown rice will not stick to each other after mixing with sushi vinegar.

That's the trick many Japanese sushi chefs do. That way, the rice doesn't break when holding it with chopsticks but breaks apart easily once you put it in your mouth.😊

Kuni-san, thank you much for making these videos. I find them very informative. I have been making a lot of sushi at home since Covid and your lessons are great. i do have a question, or maybe you can make a video about it. I have found (and understand) that many fish are super frozen on the boats, and when i order some sushi grade fish online, it comes frozen. I make Hamachi, Sake, Hotate, Unagi , Ikura and others. I still haven’t found a way to order Fresh/Frozen Saba (i look forward to preparing shime Saba from your tutorial). Even though it comes Frozen, when i defrost all my fish it still is VERY good. And if I order a whole salmon fillet, i cut it/portion it and freeze it so I can make sushi over time. It’s very good. I’m so excited about this that I’m considering getting a Super freezer (-60 degrees, so the fish doesn’t degrade in quality at all)... Anyway, I have found a problem with Maguro specifically... if I buy it already frozen, or I freeze it myself, it always turns out very bad. It is water logged, and doesn’t taste right and the texture is never right. Is it not possible to freeze this? i can’t figure this one out, but all the other fish are great, why? It would be great to get a video about buying different types of fish, and storing it, etc, the proper techniques. Myths about freezing vs fresh. Thank you!

Hi. Thank you for your comment. Well, as you mentioned, freezing and defrosting fish like tuna and white fish is extremely difficult unless you have a super freezer. I guess it's because the water content of those fish is higher than the other fish. Especially freezing white fish is total NG. Once it's defrosted, it gets soggy and doesn't taste right at all. So I never freeze white fish like Sea Bream and halibut. And I am still searching for the best way to freeze and defrost tuna. Unlike other fish, tuna gets freeze burn very easily unless you treat it right. I'll explain it in my future video. Thank you for watching.😊
