Cannot agree more about ForJars canning lids. I have not had a single jar siphon or fail to fully seal using these lids. It seems the thickness and pliability of the rubbery ring is what helps them seal so well. I don’t boil the lids, soak them in hot water or do any other special prep and they are currently sealing at a rate of 💯% I’m never wasting my money on any other brand of canning lids and am now buying new jars without lids and rings so I won’t feel pressured to use the inferior lids they come with. I hear ForJars will be producing and selling their own jars in January or February!

Years ago, when my kids were small, I canned mushrooms. The kids lived them. Don’t remember how I did it either???? But I know I canned stems and buttons. My kids would open a jar and fry up the buttons and eat them as a snack…..they went through my stack in no time. I must have followed a Bernardin recipe at the time.

I never knew that I could home can mushrooms till I saw you do it a year or so ago. Now anytime I find them on sale I can them up. Now all I have to do is find somewhere to get them in bulk and I will be a happy girl.

Hi Leisa! This video popped up as I was washing the jars of mushrooms I canned last night. I watched your old shroom videos as I worked. I also ended up with over 7 quarts of mushroom stock that is an amazing bonus. I had a cup and a half extra broth and I sprinkled some salt in it and drank it after I had my pressure canner loaded. So good!!! I am excited to make a cream of mushroom soup when the temperatures turn cooler. I did slice mine (only because that’s how they always came in the little cans), but this video inspired me to chunk them up next time to have some variety. I don’t save any money doing this, but I can’t find mushrooms that are not canned overseas. I buy the organic ones at Costco that are grown in Canada and now I have mushrooms in the pantry and I know exactly what’s in them!!!

Love your Mushroom Canning video's, I here your voice when I can them ( I think I graduated kindergarten with my canning, defiantly in grade 1) Don't through away the stems of any mushrooms, get rid of what looks not great or really woody but otherwise they can totally be utilized 🥂

Yum, yum, yum! Glad your 'shroom dealer came through for you this year. Hubby and I are Camp-All-the-Mushroom so the stems don't get cut away. I do ours in half pints and wish there was a 6 oz jar size (that isn't a one-piece lid design) because that would be the perfect size of mushrooms for us. Your jars came out so beautiful!

It’s possible the recommendation to add fresh water is there to reduce the quantity of botulism spores before the canning process starts, if so then the timings might not be sufficient if the mushroom broth is used. If I were you I’d email the nchfp and ask if it’s safe to use the mushroom liquid instead of fresh water. My guess is it’s *probably* fine but none of us are in a position to know for sure!

It looks like you can white button mushrooms. Have you ever done or can you even can portabella mushrooms? The directions I looked up just stated that you could not can wild mushrooms.

Hi Leisa, I’ve been wanting to see what you think about how I load my jars to can. I have better luck removing air bubbles if I start with the liquid about 1/4 to 1/3 up the jars then de-bubble. After I add the food going in, I then add more of the liquid and de-bubble. It seems to be so much easier especially when canning meat chunks. The next thing is that when I get the jars ready to process, Every Time, I get siphoning. I don’t wrench down on them but it is a constant issue. When I tighten a bit more, I normally have full success. The jars have sealed and it keeps the jars from losing its liquid. I’ve had jars of chicken that had almost no liquid when I only finger tight.

Or I heard if you take off your canner lid too soon, it can create a too rapid change in pressure and suck out the liquid from your jars. A lot of people let the canner rest a bit before opening the lid, even after it goes to '0' lbs. of pressure. Then they crack the lid so your product retains some heat from the pot before removing your jars.

I was watching another person can mushrooms. She said mushrooms had a lot of air in them, who knew? That is why if you can them with out cooking them, you end up with lots of liquid in your jars and floating mushrooms. It is also why your mushrooms shrink down once they have been cooked, they have released a lot of their contained air. Also I guess why they initially float in liquid when they are raw and fesh.

Have to admit I never wash mushroom, at most I will brush them off if they seem to have growing medium on them. That growing medium has been sterilised before it was used anyway so I never worry too much about it and I am lazy.

So wished I had a shroom dealer. Correct me if I am wrong please, if you are at 1000 under sea level you use the 10lb weighted regulator and if you are 1001 or over you will use the 15lb weighted regulator.

QUESTION: Hi I canned Bell peppers. Cut them blanched them 3 min put them in QUART jars processed for 45 min. Are they safe? I have found different info. One book said only process in pint jars only. Thanks so much for your time. LL

Watching you convinced me to try the forjars canning lids. My first order of 100 wide mouth came in yesterday and upon inspection, I am very impressed. My daughter in law is now ordering hers from them as well. I can’t wait for the weekend so I’m off work and can find something to can and try them out. Thanks! I can renumber helping my mother can, back in the late 60's early 70's and at the end of the time she turned off the heat and ran the caner under tap water to cool it of to open the lid. She did this after every load. Our water came out of a concrete cistern so it was not super cold. She caned everything in quart jars for a family of ten people. How things have changed. Obviously not acceptable by today's standards.

We love our canned mushrooms. My OH (vegetarian) loves to dump a small jar into butter, fry and then stor through basil or pesto, and mix with cooked stuffed pasta. We add them to stews, stir frys, all sorts. We have a fruit & veg wholesaler locally we buy from very week for our food charity, and I get my bulk mushrooms there. I try and get them on the friday as they sell them off cheaper. The standard loose pack in the UK is 3kg (about 6lb) so ai get 2, and that fills 7 pints or 14 half pints. They are essential pantry shelf items for both vegetarians and carnivores. .
