Usually you can just follow the 1-1-2 (as in the Swedish emergency number) rule when making Swedish pancakes. 1 dl of flour, 1 egg, 2 dl of milk (per individual, makes 4 - 5 pancakes). Then you can add some sugar, salt, an extra egg depending on your preference, some vegetable oil (tasteless, like canola), adjust milk-amount thereafter. Then preferably fry in butter.

A particular Swede I know of (Ran Sailing) puts carbonated water in his Swedish pancake mix, and lets it rest about 15 minutes. I think he also uses melted butter.

Well yum! Definitely will be trying these! And the lake! What precious memories for your boys! ( My grandfather and his family came to America from Sweden in early 1900s. I have grown up with a passed down recipe of Swedish pancakes. I loved whipping out the ability to make them for my friends. Also home made syrup. People that only had mass produced breakfast looked at you like your a God.

Nice! We have brought the batter ready made in a thermos or plasticbottle in a blanket. It works great for outdoor cooking if you don't plan to store it for more than let's say a day. :)

And the best part with this, you can bake the batter in the oven 225 C for 25 min or add a grated potato or carrot to the mix and fry. My cook book has one batter, 24 different variants

An easier version (to remember) of the recipe: 2 dl flour, 4 dl milk, 1 egg, salt and butter. Mix everything except the butter, which you melt (brown) in the pan before adding to the batter. Double the ingredients as needed, we usually use 1 litre of milk for us which makes enough for lunch for two kids and one adult. ☺️

very mysterious Swedish cream. You have to milk the cow on the first dewy morning of summer. But it also works just as well with regular Swedish whipping cream (40% fat) 😄

Whipped cream 😄 but anything you like works, if you don’t want to be traditional! Cottage cheese or cream cheese tastes great, or ice cream (but obviously not for lunch/dinner).
