when I take the marinated meat out of the fridge, I drain off the excess liquid while it's warming up and less liquid to pad dry.

How big of a rubbermade container did you use for 5lbs of meat I have used 2/ 1 gallon storage bags but I think I would like to use a washable container as it would be easier to mix the meat with the marinade

So, how would you go about doing it on the smoker? I have a toaster oven that can dehydrate, but it's so small, 5lbs would take days to finish.

Just gotta keep the temp down in the 150 degree range. I do it by cracking the door of my smoker just a little bit. And go easy on the smoke. I like to smoke it for a couple hours, then finish it with heat and no smoke. Thin little slices of meat get smoky real fast.

What is this wojster sauce ? Never heard of it does it contain alcohol what is it made of ?
