hi my friend ! reading this recipe I'd like to tell you how idiot-like I acted in the past doin a filled/stuffed onion. This 53 y.o. man really acted like a new born child being in the kitchen the first time ever ! Had a fist sized onion and did not know how to get the inner parts out to only keep the 2 or 3 outer layers for a filling. I really cut off top and bottom to take out the rest easier. Then I realized there's no more bottom left to keep the filling INSIDE the onion ! F*** ! I didn't think of that melon ball cutter (though I had one !), tried to do all with a midget sized knife. I tried to put in some taken out layers as a 'border' to keep the ground beef, onion, bell pepper, feta and olives mix in, cover all with Gruyére - but I failed. 'Damn ! Are Germans really that dump ?' I thought. But now YOU showed me the right way and I thank U 4 that ! ! ! now all you folks reading this can enjoy your laughter and lean back having a Jack Daniel's on the freakin' rocks :-)

I know, I've been there! My grandma made onions in cheese sauce for our Christmas Eve dinner with her, they were sooo good! I'm going to try this, but with a cheese sauce instead of Bolognese, tomatoes don't agree with me, but his instructions are great, eh?

I'm fortunate to live in Georgia. Vidalia onions only come from a small region around the town of Vidalia. That's why it can be hard to find a true Vidalia once you get farther away from home. Western states are harder, other countries are rarely in possession of them and you pay. We get the nice, big, fat ones and, yes. We have other sweet, yellow onions here but, they're not the same. Its a whole second level of flavor. They also don't make you cry like a different onion. Especially Spanish onions. A very popular thing here is onion pie, made with Vidalia. Just a pie full of caramelized onions and a couple minor ingredients. We've also made a very thick, beautiful French onion soup with a giant Vidalia as the bowl. When you go to the annual festival, they make everything you can dream of from a Vidalia. It's the ground, just like some things from small regions in France. I've been known to use my knife to scrape with BUT I'm smart enough to turn it over and scrape with the spine. You just have to be smarter than the knife... ;)
