I’ve tried the Italian meringue method and had better success there. I’m just not able to get the macaron to rise evenly in the oven. Your sagacious guidance would be most appreciated 🥰

Amazing as always🥰 May I ask how do your cookies bake so evenly.😍 They're beautiful. Mine are all over the place. Brown on one side, pale on the other, those closer to the oven door take longer to bake, those further back almost burned😅🙆‍♀️

How did you make the coconut ganache?

It was super simple actually! Melt some white chocolate and add just the cream (the super thick part) of the coconut milk. Whisk it altogether and wait about an hour for it to set on the countertop or in the fridge if you live in a warmer space. Be careful which coconut milk cans you buy though because I’ve bought some that were the “light” version unknowingly and then it never forms into a ganache because it’s too watery. Use a 2:1 ratio of you want it fairly pipe-able 💕
