Swiss cheese slice. - I love cheese and in my adopted country of Switzerland, cheese is the number one speciality. In addition to fondue and raclette, I've found another recipe that's to die for. So simple and simply delicious. It's the perfect left-over or no-food-waste recipe if you have stale bread and leftover cheese at home.
INGREDIENTS
4 slices of bread, for example: white loaf or model bread (CH)
THE CHEESE MIXTURE CONSISTS OF
200 g mature Gruyère
200 g Jura mountain cheese
1 clove of garlic
2 tbsp flour
2 eggs
3-4 tbsp dry white wine, e.g. Riesling
Pepper from the mill
nutmeg
milk or cream
TO SERVE
1 onion
Flour for turning
oil for frying
served with endive salad or frisée with an Italian vinaigrette
ADD ON in my recipe =)
Pear, finely grated
DIRECTIONS
1. For cheese slices, the bread should not be too fresh so that the crumb is more compact and stable for the rich topping. For really crispy cheese slices, pre-bake the fresh slices of bread on one side in a hot oven or toast them in a toaster. .
2. Mix the cheeses and sift the flour over them. Whisk the eggs, add the wine and cream to the cheese mixture. Crush the garlic clove directly into the mixture. Season to taste with salt, pepper and nutmeg.
3. Preheat the oven to 220 degrees.
4. Spread the cheese mixture onto the slices of bread. Ideally, bake the cheese slices briefly in the oven at a high heat so that the cheese turns a nice golden colour, melts and the bread remains crispy and soft. Place the tray in the centre of the hot oven. Bake for 10 to 12 minutes, remove and serve immediately, bon appétit.
