Ingredients
4 - 5 cups continental parsley leaves, chopped finely
3 green onions, finely sliced
1/4 cup fine burghul
4 medium tomatoes, diced
2 tbsp mint leaves, chopped finely
Dressing
Juice of 2 lemons
4 tbsp olive oil
1 1/2 tsp salt
1/2 tsp black pepper
Method
Wash & dry parsley leaves.
Wash burghul & soak with enough water to cover for at least 20 minutes
In a large bowl add parlsley, green onion, mint and tomatoes.
Combine all dressing ingredients. Adjust seasoning to your liking. Toss salad with dressing just before serving.
