This is pretty much exactly how I've been doing my tacos al pastor recently and will be my go-to except I like a little honey in the marinade, it helps char up the meat a little more and quicker and I like a little extra sweetness. A friend of mine in Puerto Vallarta showed it to me. I've also been grilling sauced up fresh pineapple and mango and adding it to my pico de gallo, heavy on the fruit and cilantro. I ate so many of these tacos with a friend of mine the other night I could barely breathe. Seriously. She was laughing at me and asked me if I wanted her to take me to the ER 😂 Excellent recipe and great job explaining it, the world is a better place with you in it! Viva La Mexico ❤️

So I made this 3 times. This recipe is the bee’s knees. Let me tell you where I went wrong. 1st time I bought all the ingredients from the grocery store. It was good. The 2nd time I bought the chili’s and spices from the hard to find Mexican grocery store. They sold all the chili’s in ziplock bags. I like spicy but it was too spicy. The 3rd time I bought all the spice from the Mexican grocery store but removed half of the chili seeds. Pure Zen.

Hi Rosanna, I loved this recipe! Such a tasty marinade and your pork meat looked like top quality. One thing I noticed, that's such a common thing to do, is the foil in the bowl where you rested your grilled pork. The thing with aluminium is that it's a know neurotoxicant when it builds up in the brain, and is linked to Alzheimer's disease. As your marinade (and my Nonna's lasagna) have high amounts of acids, they corrode the foil and it 'melts' into the food. Studies show you can ingest 50 times the safe limits of aluminium in a single meal!! In my opinion the foil isn't necessary, the meat will rest just the same, but if you do need to use foil, then use a sheet of grease proof paper to create a barrier from the aluminium! 👌 In any case, thanks for this awesome recipe!

I made this today. My son loved it, saying it was one of the better al pastor he’s had. Not bad for a first attempt by a mediocre cook. Thanks for the great recipe and clear instructions. My only caveat would be, you need a very hot grill to do this right. A very quick sear is the ticket.

I just Sub’d! I’ve done your Carne Asada recipe three times now…the only changes I did was add puréed smoke jalapeño and 1.5 tbsp of brown sugar…it is amazing! Everyone that has tried it has been amazed! I actually inject the skirt steak in about 6 spots prior to placing in the marinade, and I think the sweet spot is 6-8hrs in the marinade. I cook the skirt steak on sear plates on my pellet smoker at about 450 degrees…amazing! I’ve been looking for an Al Pastor recipe…I’m gonna give this a shot…thanks so much for the videos!

Looks absolutely delicious! You know you can buy a rotisserie attachment for your grill. They are pretty affordable. I added one to my grill. I like Mexican style rotisserie chicken. I love to make chicken soft tacos with the meat.

Which of the ingredients can be reduced or substituted in order to arrive at a less piquant flavour without though compromising the character of the dish itself. I see the ancho chilly powder, the cloves and the guajillo peppers as being the potentially hot ingredients. I would appreciate if anyone can offer an advice, because my wife cannot tolerate spicy foods.

Well, the part of the chili that holds the spiciness is the seeds and veins inside. If you simply remove those, the peppers will not be spicy. If I were you, I would buy dry ancho chilies instead of the powder. That way you can remove the seeds yourself. And then simply just grind it up in the blender.
