Love it spot in man he knows, like Cavendish proved , being positive and composed maximize your potential keeping control of that heart rate and stress hormones. You have done your training it's done come race time it's efficiency so he listens to his body not a computer. Wonderful thing nibali and contador preach same it is most valuable training tool available the metrics but if you aren't composed you will not make right moves or win. Cav didn't get faster he just had confidence and believed again and tried things that his confidence might not have even attempted shooting gaps or waiting to kick. That doesn't make him push more watts than ever just gets him closest to optimal outcome. It's such great theater too!! Love it: ).

I think part of it has to do with the fact that he grew up in Slovenia. Humility is a valued trait over here and cockiness/arrogance is generally criticised. That's why a lot of our athletes are very humble and down to earth. Even when they've achieved great things that anyone should be proud of it very rarely goes to their head.

Learn to adapt your questioning plan as you go. Even after he made some very quotable remarks, you missed follow-up on that and instead asked unnecessary questions. And holy shit, you have to ask if high-performing peers can be friends?? "How much reliance do you actually have on the power meter" you could ask; why on earth would he NOT use it at all?
