Actually, Somtam was first created in the central region during the Ayutthaya period. Papaya is a native plant of South America, brought by Western traders by ship. We got the seeds and planted them until they became widespread. In the past, we didn't call it Somtam. It was a fruit salad with dried shrimp. It had a sweet and sour taste. Central Thai people prefer to eat food made with coconut milk. Later, it spread to the northeast and Laos. They like to add fermented fish sauce. It has a salty and spicy taste. It is a food that is very popular among the northeastern people.

Sometime they use "ไก่บ้าน" (Kai-Baan) which is another traditional local chicken breed. It is chewy and sticky as hell. If you find it really hard to chew it might be that type. Anyway an eastern style you are eating called ไก่ย่างเขาสวนกวาง ("Kai-Yang-Khao-Suan-Kwang") which is more dried than the other types. For an example ไก่ย่างวิเชียรบุรี ("Kay-Yang-Wichean-Buri) this type is more juicy also ไก่อบฟาง (Kai-Oob-Fang) are the juicy type.
