Hi Sammy great vid again. The reason for resting the batter is because when whisking the flour you stretch the gluten making it chewy so by resting it the gluten relaxes and you get a crispier Batter. I love grilling Tailor with lemon juice and brown sugar sprinkled on the fillet or you can’t get better smoked fillets

Ice cold soda water works well if you don't want to use beer also you can put some ice cubes in the batter mixture if you don't have time for it to cool in the fridge

Love fresh Taylor, That's how I do beer batter only I season the plain flour part. Just salt , Pepper and a little turmeric or keens curry powder. About an 1/8 teaspoon would do for the amount you made. It knocks off the fishy taste that "Bait" fish has without tasting like curry. This was taught to me by an old mate Greek fish and chipper. Have you tried smoking them? I brine mine for 18-24 hours beforehand, dry them so a nice pellicle forms, then smoke them in a charcoal smoker usually with hickory wood chunks. It's relatively easy and the taste is incredible! I also make poke with raw tailor (we call them bluefish here in the US, and a certain size are called tailor blues), both shoyu and spicy mayo style.

Just a question Sam, what is the closest fish Tailor tastes like?. Many years ago( almost 50!!), I fished off the rocks near Geraldton and caught Tailor and Kingfish and the husband (who was a chef) of the couple we were staying with cooked them in batter and they were beautiful but I can't remember which was which. I have been throwing Tailor back for years.

I’ve tried battering it . Idk the flavour is different for my liking . Now a fish cake it would prob be wonderfull . But it’s a throw back species for me till I buy a food processor to try the fish cakes . Saying that I do tend to throw most fish back in the water to catch again when bigger

That's true but it is actually muscle not bloodline and is what gives the fish the strong flavour

Cut the fillet in half then take out the blood line by cutting a chamfer off the centre and off each side. It gets most of the blood line out and makes them taste way less fishy.

Hi sammy great videos , dunno if anyone else has picked this up but can you tell me what was jumping out of the water to the left of your rod in the video at the 2.32...at first i thought it was probably a dolphin but when i watched it over gain it seemed too short in body length..to be a dolphin ..so was it a seal !!??

Ted James hey mate, I’m using a shimano Stella 6000, and a 12ft penn prevail rod. The hard body is a zerek barra x pro in the largest size 👍 Unfortunately I won’t be filming with Shauno for a little while as he is up the cape and I’m heading out to the reef. But once we are both back we’ll do some more fishing 🍻🍻

JT 10 hey mate, the yellow handle is a Swibo, and the white handle is a dexter Russell. I’m pretty pedantic about my knives, I like to keep them sharp, blunt knives are dangerous. I’ll try do a up a sharpening tutorial one day for you 👍

We call those blue fish and they taste like shit. Some people say of u eat them right away like only 1-2 hours old they aren’t that bad but imo they are the worst tasting fish in the whole of the north east.
