好像有些人對於手直接下去這點感到害怕和不衛生.......因為學過想說一下 其實這麼大鋼的麵糊要用器具一次拌勻是非常困難的(有可能過程中消泡、拌不均勻) 學過餐飲或考過蛋糕檢定的有些老師教的方式就是要你直接手下去拌(避免上面那些問題速度也比較快) 我個人是覺得 蛋糕還會經過200度的烘烤應該沒那麼嚴重(如果手部受傷應該不會有人強迫你做了吧....加上我相信他們在弄之前一定有洗過手)但還是真的那麼怕生病沒衛生那還是別吃了吧

@@gamarleton . that is how we make cake in the pastry. Even in the 5 stars hotel kitchen, they will use hand to mix the dough. The reason: our hands mix all the ingredients welll than the machine. Because liquid (butter or oil) will sit in the bottom of the machine/big mixer. FYI: we are not allowed to wear watch or jewelery when we work in pastry, because it might had dirt in it. And we keep washing our hands before and after touching stuffs.

People complaining about the arm. Let me educate you. I worked for 1 of the biggest bakery’s in the uk their they made cakes to trifles even down to egg custards for all the major supermarkets Asda, Tesco, Sainsbury’s, marks and Spencer’s and the rest. Don’t kid yourself into thinking they don’t mix it the same. Not eaten a cake or custard slice from a supermarket in over 10 years.

In the food industry, especially bakeries like this have their employees shave their arms and wash frequently, you just don't see them because that's just boring to watch. To get the batter properly folded with the meringue and make sure the cake is fluffy, folding with the arm is the only way to get it right for big batches like this. Gloves can harbor bacteria, sweat, etc. in the wrong situation and would get lost in the batter and cause even more of a health violation. It's not practical and they obviously know this, anyone would in this trade.

I worked for KFC, and to make the coal slaw all the ingredients were put into a trash can, and we rolled up our sleeves, and both arms into it to mix it. I couldn't eat it anymore after doing that.
