It's all relative. They do have to earn a living after all as well. And finally, imagine how much they would cost in the west.... Apart from those 3 things you are correct :p

This market is frequented by tourists more so than locals so the prices are more expensive. The foods at this market tend to be a bit less authentic Taiwanese and more food that ppl from elsewhere (the west and other parts of asia ) would enjoy but that’s not to say locals don’t frequent the market or enjoy the food buy when I went it was mostly tourists. If you want cheaper food you should go to places that everyday taiwanese people frequent since the food is more authentic in terms of Taiwanese cuisine and also a bit cheaper. When i’m abroad I enjoy helping ppl make a living by purchasing their food and leaving a tip. If you’re on a trip to Taiwan and can’t afford to pay the vendors prices you should probs have saved more or just bought a lot of convenience store food/cookable items at the market.
