The idea of jerky is to use your secondary cuts .. tenderloin has no elastin in it so thats what gives you that gummy texture . Try slicing a rump and making jerky from that as it has better elastin and fat through it .. loving the vids and uncut 😀

You don't have to be a hunter to feel that energy from the deer blind when one goes down. It is such a primal satisfaction. If you think hunting is immoral, you don't understand humanity. I say that as a person who doesn't hunt personally. It doesn't get any more ethical than that... That deer didn't move even the length of Banjo's peepee! That's not far! (Kidding Banjo, congrats my guy!)

Hey guys just so you're aware when making jerky it needs to be lean as fat won't dry. You're issue probably has to do with the higher salt content drying out the meat. You may also want to try lowering the heat on the dryer. I know when I put mine on I'm normally at 160 for about 3 to 4 hours.

When I do beef jerky, I slice it up as about as thick as you did the deer meat, put in it the zip lock bag and marinate it for only 24 hours, flipping the bag on the other side after 12 hours. Then I dehydrate it at 160 for 5-7 hours depending on how dry I want the jerky. The key is to be there so you can check it every so often, so it doesn't dry out too much.

Backstrap cut In to chunks flower lemon pepper and salt and pepper and whatever other seasoning you want you can also add crackers for more of the texture and crunch then fry it best way to cook backstrap

I love making breaded venison!! Make an egg wash with eggs, splash of milk, lemon juice, pepper, garlic. Thinly slice either top/bottom round or blackstrap and put in egg wash for an hour or so. Then use Italian bread crumbs and pan fry in some vegetable oil. Sooooooo good

One of my favorites is frying it in flour and hidden valley ranch seasoning. I usually use the backstraps or the loins. There is another recipe that is bbq bacon wrapped backstraps nuggets.

Have a great tenderloin recipe. Get some apple pie filling, bacon, and your meat and place the bacon strips on a tray. The put the tenderloin down. Then put your can of apple around and wrap the bacon

Down south you fry the back straps and inner tenders Step one clean silver skin or any thing nasty Step 2 cut the back strap in even 1 1/2 inches or close as u can then tenderize Step 3 marinate them in coke or any acidic soda for 3-4 hours Step 4 drain the marinate and dry them with a paper towel Step 4 beat 4 eggs and season your flour with Tony’s or any creole seasoning to your taste with garlic powder onion powered and cayenne pepper Step 5 heat peanut oil up to about 375 in a fish fryer Step 6 when taking them out put them on the paper towels and hit with more Tony’s Step 7 make any sides and enjoy great football game and chill night dinner😏

Stuffed Backstrap Ingredients: Backstrap, 1 lb bacon, 1 onion, finely chopped, 2 garlic cloves minced, 8 oz cream cheese, 1 cup panko bread crumbs (optional: 2 cups chopped mushrooms, 1/4 cup chopped scallions); Preheat oven to 325° F. Butterfly the whole Backstrap like a hotdog bun slit, not all the way thru. In a skillet, cook the bacon, onions and mushrooms on med heat for 5 min. Add the garlic and cook for 2 more min. Remove the skillet from the heat. Stir in the cream cheese, bread crumbs, and scallions. Spread the cheese mix evenly over the open backstrap to 2 inches from the edge. Roll the backstrap jelly roll style and tie it up with butchers twine or cotton string in 5 evenly spaced places across the backstap. Put in roasting pan and put in the center of the oven until it reaches 165° or for 30-45 min. Let it rest for 10 min. and slice.

Hey flair you should take the loin of the deer and cut it in to thin slices and then get egg wash and dip it in there then in club crackers. To cook it get a cast-iron and put a whole stick of melted butter in there then cook the loin pieces

You should try canning deer meat. I know it sounds pretty weird, but I like to can it up and cook it in a pressure cooker. After that you can put it in the pantry and eat it whenever you want. Heat it up in a pan and eat it. I personally like to eat it with rice and gravy. Believe it or not it is super tender as well!

FOR BOMB DEER JERKY: Use the rear roast, freeze it for an hour or so, then slice in 1/4- inch slices (against grain) and marinate for 12-24 hours. Then dehydrate until it is no longer very squishy. Then leave it to set out for at least an hour to re-gain some moisture.. then bingo
