I'm 70 yrs old now; when I was growing up in the Midwest of the USA my parents lived "off the grid" before it was popular, my mother raised all the fruits and vegetables for a family of five, canning most of it, and freezing the rest when the garden produced faster than she could can it. When planting potatoes, the rule of thumb was one acre of potatoes 14:50 per person, and kept in a deep, cool fruit cellar. Carrots were stored in a 50-gallon stoneware crock, a layer of carrots covered with dry sand, and another layer of carrots with sand all the way to the top. She would pickle red beets in quart jars, at least 52 quarts to last a year.

Same with tomato bushes. They need the soil piled to provided strength and stability. You can also trim branches off the tomato bushes and use for creating new tomato bushes ie cutting propogation. This means you will have stringer original bushes with higher yields. Plus you have continues tomato's as the original bush ceases to the fruit the cutting bushes will start fruiting.

I'm from Maine, USA, next to northern New Brunswick and Quebec. We are a potato region. With new potatoes (July here) we boil them in their jackets, add frozen pearl onions Add frozen or fresh peas in the last 5 minutes of cooking the potatoes and onions. We drain them and add butter and sour cream, Shake, don't stir the sour cream because it will mush the potatoes. Salt and fresh cracked pepper make this a real treat. They are even better warmed up the net day if there are any left.

The first year in a new garden the plants always come up very well because of the unspoiled soil. The next years however you have to manage the soil quality a little bit so as to keep good crops.

Also, if you can afford it, you should invest in a small "mill" to split/cut logs. It will stand you in good stead. Or maybe you could rent one for a week or two?

You should think of planting some fruit trees: Plum, Apple, and Cherry. Then perennial veggies: Asperagrass. Then perennial berries: Raspberries, Black Berries, Grapes, and Strawberries. And perennial Rhubarb.
