I quartered this recipe to make a roast chicken tonight and it was absolutely incredible!! I added some lemon zest to the marinade and roasted the chicken with the cut lemon inside, with lots of onions in the pan to get caramelized. Thank you so much! This is going in my regular rotation for sure.

You really need to try injecting the masala into the turkey using a meat injector and marinating overnight. The results especially in the breast meat is phenomenal. I'm from Houston, TX and deep fried Cajun seasoned turkeys have been all the rage for years. I have created a fusion by injecting and rubbing with tandoori masala instead of Cajun seasoning and the results have been amazing. My guests can never get enough and I have gotten many requests to prepare turkeys for others during the holidays

Wow, I never thought to add nutmeg to my roasted bird. I have tried adding allspice & cinnamon to my roasted chicken--great additions; of course, I've never cooked a turkey before, so your recipe is greatly appreciated. . . looks like lots of great ingredients. The spices disappear into the meat, if it's a little bit more, it won't matter.

If you don't want to use red food dye then something more natural would be using Paprika (Kashmiri Red Chili Powder) or possibly a combination of Paprika and also Tandoori Masala. This video is great and has the necessities. I have my own recipe and feel like there are some ingredients missing when I compare it to mine, but everyone's opinion is different. I feel when making anything tandoori then a key ingredient is the Tandoori Masala, which you can purchase directly from Amazon if you do not have a local Indian grocery store in your area. I use the brands Rani and Kisna and both are great. Good luck.

That turkey's gonna be dry AF! It needs fat...either, ghee, butter or mustard oil or some combination of these.
