Im from the province where the poutine was invented ( Quebec ) not a chance fresh mozzerella ( broconchini ) would be allowed to be used instead of cheddar cheese curds

There are no cheese curds in NJ. We make Disco Fries which is Poutine with Mozzarella instead of curds
