if I use a regular sewing machine will the stitch like stretch out cause when you do a regular hand stitch the stitch just breaks

Do you mean the straight stitch on a regular sewing machine? You can use a zig zag stitch or check your sewing machine's manual as it may have other stretchy stitches that you may want to experiment with. Be sure to test the stitches on a scrap first. I usually do the topstitching of the binding on the neckline and armholes with a wide straight stitch or use a stretch double needle. Hope that helps!

I do use a straight stitch on vertical, slant (dolman shoulder), and curve (neckline, armhole) seams. For horizontal seams like the hem, there is a risk of the stitches popping so perhaps use a stretchy thread like a Wooly Nylon thread. There are a variety for stretchy threads to choose from. That way you can use a straight stitch without the thread breaking when stretched.

Why do you use a zigzag stitch vs a straight stitch?

A zigzag stitch is great for knit fabrics as it lets the fabric stretch without the seams popping. Sometimes, I use a wide straight stitch to topstitch knit binding instead of my stretch double needle.
