It´s a traditional song that bakers (women always) sing while baking. The table it´s supposed to be covered with flour (so they shake their hands from time to time). The beat is also a tradicional rythm. They do it very very well. There are lots of labour songs in traditional folk music.

The song is typical of the Castile and Leon region, which is why they sing in Spanish and not in Galician, as is usual for them. "Las panaderas" is a work song that was sung during farm labours, especially when the bread was kneaded, that's why, as you guessed right, the rhythm hitting the hand and the table mimics the kneading and then they shake their hands (of flour).
