They never proved he ate the baby, all they knew was a baby went missing, and due to tarrare's behavior, he was an immediate suspect. He ended up fleeing to escape the mob

the obvious medical explanation for this is that something was wrong with his digestion. Either stomach acid wasn't produced properly, or the nutrients weren't absorbed very well, but every behaviour and health problem he had revolved around having to eat abnormal amounts of food just to barely survive - a sign that he was just not efficient with processing said food

If I’m not mistaken, he was speculated to have eaten the baby but the only thing they knew is that a baby was missing so I assume they didn’t have enough evidence to just flat out say it was him
