Grated berry pie🍓
🥄 Dough:
200 g flour (7 oz)
100 g butter (3.6 oz, 82%)
80 g egg yolks (4 pcs.)
60 g sugar (2 oz)
6 g of baking powder (1 tsp. with a slide)
pinch of salt
🍓Berry filling:
100 g strawberries (3.6 oz)
100 g raspberries (3.6 oz)
50 g blackcurrants (1.8 oz)
50 g blueberries (1.8 oz)
60 g sugar (2 oz)
20 g cornflour (0.7 oz)
🥄 Prepare the dough.
1. Mix the yolks with the sugar.
2. Mix the flour with the baking powder and salt.
3. Rub the butter into the flour.
4. Add the egg and sugar to the crumbs and knead the dough.
5. Separate 1/3 of the dough, wrap in clingfilm, send to the freezer. Wrap the rest also in clingfilm and place in the fridge - for 30 minutes.
🍓Prepare the berry filling.
1. Put the berries in a saucepan.
2. Mix sugar and starch, add to berries, stir.
3. Place on fire, bring to a boil with constant stirring, let simmer for 20-30 seconds.
4. Transfer to a bowl, let cool.
🍰 Assemble pie.
1. Take the dough from the fridge, roll between two sheets of parchment into a circle 23-24 cm in diameter.
2. Remove the parchment, place the dough in a mold.
3. Cut off the rest of the dough.
4. Place the filling, flatten it out.
5. Take the dough from the freezer and grate it on top of the pie.
6. Send the pie to a preheated 350F oven for 30-35 minutes.
🥚Glaze:
20 g egg yolk (1 yolk)
1 tbsp milk
Glaze the pie 3-4 minutes before it's ready.
🍰 Sprinkle the finished cake with powdered sugar.
