Exactly. All of the “salty” foods were items that typically have a lot of salt, and without the water content to balance it out - salt ball!

Popping in to offer a little clarification. Dehydrated and freeze dried are NOT the same thing and shouldn’t be used interchangeably. Rachel clearly is expecting/wanting the textures of dehydrated foods, but is taste testing freeze dried foods and they will never have the texture she’s looking for. Most simply, these are the differences between dehydrated and freeze dried: DEHYDRATED: • food is dried out via circulating warm air • approx 75-80% of moisture is removed from the food • food retains more moisture (vs freeze drying) and because of that, many items- especially fruits and veggies, retain their softness or even become soft, and are kind of chewy- almost gummy like in texture- like the “soft” apples and strawberries Rachel keeps mentioning • foods shrivel/shrink and frequently become tough • shelf life for dehydrated foods can vary, about 10-15 years or so depending on the type of food and also how it’s packaged FREEZE DRIED: • a more complex method where food is dried through a freezing and re-warming process that takes place in a vacuum chamber • 98-99% of moisture is removed from the food • since no discernible moisture remains after freeze drying, food becomes hard, and crunchy in texture, even brittle • foods do not shrink or shrivel up, in fact- some actually expand • foods become extremely light and airy, it’s common for packaged freeze dried foods to have a significant amount of powder in the bottom of their bag/packaging • most freeze dried foods are shelf stable for 30 years

Due to the specific topic at hand, when you say, “where does liquid nitrogen fit in” and “but what’s the process with liquid nitrogen,” it’s implicitly understood that you’re seeking information on liquid nitrogen within the context of the current conversation/topic. However, since liquid nitrogen has absolutely nothing to do with: • the video • my post • freeze drying foods • dehydrating foods I’m left with a singular broad topic (liquid nitrogen) and no specific question or qualifying details to narrow down or identify what particular information you’re looking for.

Okra isn’t naturally salty. They are adding salt to them . You don’t need salt to freeze dried . Try Trader Joe’s dried okra .

Having been a backpacker for many years I know something about dehydrated foods. They must be re-hydrated. Try it again after re-hydrating the foods under camping conditions. Reconstituted foods by my experience become either soup or mush. But they do taste good after a day on the trail. For you, the trail is overkill, but look up directions on the net for preparing them. You wouldn't eat dry cake powder would you? Cute and kind as always, I love you.

For pre packaged freeze dried MEALS, such as an MRE, yes- they need to be reconstituted and warmed. But freeze dried SNACKS are quite popular and aren’t intended to be reconstituted. They’ve become “popular” and “trendy” by way of social media culture due to their crunchy texture and are simply designed to be crunchy as-is snacks.

I wish you would have tried them dehydrated, but also rehydrated!! I would love to have known if the texture went back to normal once rehydrated. That's why people dehydrate them is so they'll have them when the shtf type of scenario or when backpacking so things aren't so heavy! Next time please do that!

I’m from Tennessee and we eat okra all of the time, a favorite in my family, they are usually not salty unless they’re pickled, we eat fried okra pickles okra and regular cook okra and it’s not salty unless pickled or the fried okra has salt on the top!

They taste so bad because very few things are meant to be eaten in their freeze dried state. You're supposed to reconstitute them before eating. It's a way to preserve them, not serve them, with the exception of some fruits I guess

Others have pointed out dehydrated and freeze dried is different so I don't need to. But freeze drying is a form of food preservation. Often with vegetables you rehydrate them in soups before eating.
