You reminded me making a Sunday roast needn't be a complicated affair, with multiple different side dishes that must be timed with military precision to all exit the oven simultaneously! It can be kept simple as you did, with well chosen, fresh, quality ingredients, and prepared with a drink in hand, some music in the background, and a smile as the process brings to mind all the family roast dinners of yesteryear. Loves the vegetables and the seasoning. It is cool that you have the Dutch oven from your grandmother. I have my Mom's Joy of Cooking book with the loose pages, notes, and liquid splashes. Looks so delicious and flavourful. Thanks for sharing. 😍😍

Nice meal. Interesting you roasted the veggies and then finished in a saute pan. Never seen that before. I'm assuming to keep the veggies from getting too dried out in the oven. Hello from rainy Oregon.
