First time here. Very impressed by the visual as well as the audio. I find it is rare when a chef explains What to do as well as what Not to do & Why! Essential info for a beginner.

We made this for dinner tonight. It was delicious. The bok choy really cooks down like spinach. Thank God, we grow our own. We just planted more last week. I will be counting the days to pick it so we can make more.

For some reason my book Choy gets ruined by grubs, however the sweet potato leaves don't get touched and they're really nice stir fried with garlic and miso.

Brilliant method. Always wondered what the accepted proper way to cook this was. Now I know. Very good video. Have to be careful in a domestic kitchen that the high heat doesn't set the smoke-alarms off! - so it's worth turning the extractor fan up and opening the doors!
