I tried this recipe! It was good! So good! I'll do this again next time. I brined the chicken for 4 hours, and followed the recipe. Next time, I'll probably brine it overnight and add more spices (to the brine). Maybe some pepper and bay leaves (I love bay leaves), also more salt on the brine. The breading mix scared me at first, it looked red and I was worried that it's going to be spicy and my little sister won't be able to eat it, but it wasn't spicy at all. It was perfect! I ran out of cornstarch and only managed to put a half cup but still end up good! And it really did had those nice texture! after frying. I fried it using Palm Oil. Medium Heat for 6 minutes then low for another 6 minutes - my chicken was kinda big, so I cooked it longer. Will do this again! Thanks for sharing this recipe! ⭐EDIT: So I did this again with the complete ingredient (cornstarch). It taste off. It taste like it's lacking seasoning. I suggest removing at least 1/4 cup of All purpose flour, if you don't want that, add a little bit of extra of every seasoning. This is still my go to recipe! ;u; )///

I tried this today dahil pinilit ako ni husband. Lo and behold ako na lagi palpak mag chicken nakaperfect din sa wakas. Thank you for sharing your recipe indeed crispy on the outside and juicy in the inside. Naubos ng asawa at anak ko kahit wala kami gravy, tonkatsu sauce ang ginawa namin sawsawan masrap parin. ive taken the time to really think about fried chicken and its vast varieties. Fact is.. there is indeed an open secret on how to cook delicious fried chicken. and here's what you need to know on how to achieve it. #1. PREP. All great chicken needs great seasoning, and the first venture is to Brine and Marinate the meat. Think about the best chicken you like. where is the flavor located? only in the crust batter and skin? or is it within the meat as well. Or maybe its in the oil. Technically it should be all three. but it begins with flavoring the flesh by way of a good salt brine and buttermilk marinate to both flavor and alter the texture of the meat, making it more tender juicy and flavor rich when cooked. 2nd. The crispy outer skin. here is where the variety is huge. will it be virtually batter less, very caked on batter, super thick. breaded batter, or a light but crispy. What does it look like? and how do you achieve it? Many different roads to execute a particular type of crisp. The chicken displayed here is visually delicious. It looks professionally prepped and cooked. something liken to a prominent fast food chain. But what is the key element to get that result. well, you need some form of carbonation to get that look and thus that type of crisp. That can be achieved by way of baking powder which foams up in liquid thus creating those tiny pockets of air and as a resuly making the batter light and crispy or by way of a good beer which also achieves the same effect with the addition of enhanced flavor. such fried chicken of this style requires deep frying methods. either a deep fryer, a deep pot, or even better a pressure cooker. you batter should be liken to pancake batter, not too heavy yet not too light either, consider a mixture of flour elements, AP, a few teaspoons of baking powder, additional potato starch not much, garlic, onion, paprika (dolce sweet) cumin powders, and rice flour all mixed, Wet dip, then dry, or vice versa the results will vary, make sure those ingredients are of higher quality than normal. Then the cooking oil. preferably peanut oil. OR vegetable oil mixed with some crisco for flavor.

@@HaiNguyen-tu3yu Well we all hold our recipes close to our chest. family recipes and all, but i will say this, great fried chicken is only difficult for most people due to how we think about chicken. we tend to think all wrong and thus making far more complicated than it truly is. theirs also short cuts, for instance, if you know how to make decent stuffing for turkey and thanksgiving then you've actually inadvertently made a great batter for fried chicken. The flavor profile is exactly the same. consider the ingredients in great stuffing, there are elements that you would never consider for chicken that are in fact the key ingredients to making a great tasting fried chicken. ingredients like celery salt. also think of soups, again though their are many types of soups consider the ones that have a similar flavor profile as great fried chicken. The ingredients are the same. KFC the flavor is mostly in the batter and crust, same goes with Popeyes. Louisiana fried chicken, think of their key ingredients in their style of cooking, the 'holy trinity' same flavor profile. BUT with all that, their is the process of cooking itself. and the major mistake we tend to make is hot and fast... NNNOOOOOO!!!!! always fried medium heat and a little lower and slower. to reduce burning and flash over cooking, the meat itself takes a particular time as does your batter and breading. Sometimes ironically you may want to try boiling your chicken first, and then breading and frying afterwards. Its a weird technique but it assure the meat is cooked correctly, then its all about obtaining a crispy crust. another ingredient that use to be a mainstay for cooking fried chicken decades past... LARD. aka crisco. either or shelf wise. LARD infuses a massive amount of flavor!!!. It has a bit of an off-putting smell being pig fat, but like all thing pork the flavor it brings to chicken is ASTOUNDING. so you can always infuse a bit of Lard into your oil of choice. Remember to think about flavor profile that exist outside of the realm of chicken. and try some cheats as well. such as adding Lipton noodle soup packet powder to your batter. again flavor profiles. chicken is one of those things that is so easy that it become hard. because we over think it.

I love this recipe but doubled the spices and they still came out light but just right for sellable chicken. Triple spice with your favorites. Definitely brine with more salt. I brine with 1/2 cup salt for every liter, 1 hour to overnight. When brining I always put lots of citrus and only add herbs and spices when I'm roasting instead of frying, but adding chiles to the brine is always nice.

Adding five spice powder would definitely take it to the next level ;) Pero eto ung recipe na the best by far dito sa utube by how the FC looks. Pero double fry tlg ang pinakasikreto sa crispiness ng fried chicken.

Hi @@marikinahurt . I like a little kick to my chicken so I added a little cayenne pepper but it wasn’t enough. So I would suggest seasoning the dry flour mixture and tasting it to make sure it’s to your liking. Have a wonderful day.

Looks fantastic. I will make this but add about a teaspoon of salt and a tablespoon of cayenne to the flour for that pop!

Pro tip :- When dipping in the mixture before frying press the chicken as hard so that it tears a little bit ... This will give a nice texture
