Ingredients
Rice - 2 cups
Cashew nut - 250 grms
Jaggery - 1 cup
grated coconut - 1 1/2 cup
Cardamom - 5 to 6 nos
Dry ginger powder - 2 tbsp
Method
Take a pan and add rice and water.Wash them well, drain, and keep them aside.Heat a pan and roast the rice till it changes its colour uniformly to a darker shade.once it's crisp and shrinks them well.Then transfer it to a plate and let it cool down.Add cashew nuts and roast them well.Transfer it to a plate and set it aside.Then grind the roasted rice into a fine powder and set it aside.
Then grind the cashewnut into a fine powder and set it aside.Then crush the cardamom into a fine powder and set it aside.Then grated the jaggery and set it aside.Take a pan. Add a quarter portion of roasted, ground rice.
Then add the roasted cashewnut mix.Again, add grated coconut and jaggery.
Add crushed cardamom and dry ginger powder.Mix them well with your hands.
Then grab some of the mixture and shape them into lime-sized balls by squeezing the mixture between your palms until it firms up.
Then mix with the roasted riceground mix and set aside.
Repeat the process till the entire mix is made into small balls.
Serve the delicious cashew rice balls.
