Every time I fry yam, it’s still hard. Am I doing something wrong?

If the yam is hard you might wanna sprinkle a little bit of water after adding the yam to oil. Be careful to avoid oil splashed though

Sometimes what I do is, I boil or steam the yam for about 5 minutes before frying.
