This reminds me of something my grandma use to do! My mom was one of 17 kids and they ate lots of potatoes and beans and my grandma would make potato cakes when she had leftover potatoes. I got to try them when my mom made some and they were delicious. Thank you for sharing this recipe. Makes me think of good times ❤

You should do some more cookin like Mamaw videos, if you can remember more of her cookin and put your own flare on it. I'm sure that I've probably had a version of those before as a kid, but I'll have to make some and put my own twist on it. I think that I would like them by using a twice baked potato recipe and frying them in butter and then topping them with sour cream and chives when they are done.

My mom would make these with leftover mash potatoes, corn, egg, bit of baking pwd and some flour and fry them up crispy! So good

That green pan is shot and needs to be replaced. The coating is gone and scratched up, that stuff is flaking slowly into your food. Also, sweat your onions next time and let them cool before putting them in your potato cakes. It will amp up the onion flavor.

My mom made them too! But, she used left over mashed Potatoes and she added canned creamed corn to the Potatoes. She also seasoned them, especially with a lot of garlic powder. They were so good! I miss them. I have to try making them myself.

I love tater cakes they are so good, but I have never tried it with pickle or mayo. I had to stop watching the war on Israel and just pray for us all, this war is so senseless, and I do too believe the Lord's time is approaching. Wish I was there to help you enjoy those tater cakes. 🙏
