urgent: so i put the machine in auto on both sides, then in standby, it didn’t look like it did anything, so i repeated those steps, auto both sides, then standby both sides, does this deactivate the standby/auto and will it ruin the contents inside

Let's assume you are just giving away the soft serve to customers, and you have 100 person to serve. Is the machine able to keep going as you show on the video or is it gonna needs recovery at a certain point? If yes, after how many cones served, and how long should be the recovery time? Thank you in advance

Yes this machine will need recovery, the key is to slow down the line enough for the machine to recover. The freezing cylinder holds 3.4 quarts / each and initially takes about 8 - 12 minutes to freeze down. Recovery is quicker if there is still frozen product in the barrel.

So a 3.2 liter barrel yields 3.2 liters of product before recovery is needed. Makes sense... ...and that would be max recovery. How do the servers equally balance out usage between 2 barrels? Answer: They don't. Likely if one if soggy, they dump it, and try again on the next barrel. UNLESS, of course, both barrels contain the same mixture, and the boss man tells them to ALWAYS use the center dispenser (the twist). IT IS an option for those busy days. Later!
