I don't think the writers wrote Veronica out because they wanted to, at least not as early as they intended. The actress who portrays her was cast in Netflix series. Not that I know for sure, the reason.

But I’m not 100% sure and it could still be the reason for the conflict if she got on young Sheldon when alexa and Katie wasn’t filming, but when they got back to filming the next season she couldn’t do both shows anymore.
