Sinigang na Bangus sa Bayabas is a delicious Filipino soup dish that features milkfish (bangus) cooked in a tangy and sour broth made with guava (bayabas) and other vegetables. Here's a simple recipe to make Sinigang na Bangus sa Bayabas:
Ingredients:
1 large milkfish (bangus), cleaned and cut into serving pieces
4-6 pieces of ripe guava (bayabas), quartered, you may add more
1 medium-sized onion, quartered
2 medium-sized tomatoes, quartered
1 bunch of kangkong (water spinach), leaves and tender stalks only
1 medium-sized radish, sliced
1-2 long green chili peppers (siling haba)
2-3 cups of water
1 sachet Sinigang mix (optional, to add more flavor to the soup)
Fish sauce (patis) or salt, to taste
Instructions:
In a pot, add water or fish broth, onion, and tomatoes. Bring to a boil and let it simmer for 5-10 minutes or until the tomatoes are soft.
Add the sliced radish and guava. Let it simmer until the guava becomes soft and mushy, about 10-15 minutes. You may add Sinigang mix if you like.
Add the fish and let it cook for about 8-10 minutes or until it is fully cooked. Be careful not to overcook the fish as it may fall apart.
Add the green chili peppers and the kangkong leaves and tender stalks. Let it simmer for another 1-2 minutes until the kangkong leaves are wilted.
Season with fish sauce or salt to taste. Serve hot with steamed rice.
Note: You can adjust the sourness of the soup by adding more or less guava depending on your preference or more Sinigang mix. You can also use other vegetables like okra, eggplant, or string beans.
