Today we're making baked Italian meatballs stuffed with mozzarella. I had to modify the ingredients a bit down below, so follow that recipe if you plan on making them. Also, feel free to fry them for an even better result, but most of the time baking the meatballs is easier and makes far less of a mess. I hope you enjoy the mozzarella stuffed meatballs!

MOZZARELLA STUFFED MEATBALLS
INGREDIENTS (For the meatball mix)
1 pound ground chuck
1 pound ground pork
2 1/2 cups fresh breadcrumbs wetted with milk then squeezed out or 2 cups plain breadcrumbs soaked in a 1/4 cup of milk
1 1/2 cups Pecorino Romano - grated
1/2 cup fresh parsley minced
2-3 large eggs
2 cloves garlic - paste
1 tsp kosher salt
1/2 tsp black pepper
REMAINING INGREDIENTS
1 block mozzeralla - cubed
4 cups marinara sauce - this recipe: • EASY MARINARA - Way Be...
INSTRUCTIONS
1. Preheat oven to 400f and set one rack to the middle level and one to the top level.
2. Gently combine the meatball mix ingredients in a large bowl.
3. With wet hands roll approximately 2" size meatballs. Place a cube of mozzarella in the middle and roll the meat around the cheese so that it’s completely covered.
4. Bake the meatballs on a wire rack for ~30 minutes on the middle rack or until cooked through.
5. Place a layer of marinara sauce in a dish then add 1-2 meatballs on top. Grate a bunch of Pecorino Romano cheese on top and serve. Enjoy!
NOTE: The exact cooking time will depend on the size of the meatballs. Use an instant-read thermometer and remove once the meatballs hit 160-165f internal temperature.

"Exactly one teaspoon, I measured it with my hands" is probably the most Mediterranean tool of measurement I can think of 😂 My family's from Portugal and that's just about as accurate as you're gonna get from my grandmother lmao My parents and I love your stuff! You popped up on my KZbin feed a few days ago and we've eaten your Sunday Sauce like, 3 days in a row, it's so good! Can't wait to see more from you! 😁

Just discovered your channel. The video was so easy to watch relaxing voice excellent background music nothing overpowering and a great recipe for meatballs. I am making meatballs right now and it’s eight in the morning I’ve made them 1000 times and I learned something new in this Sicilian household. Same here Linda. He comes across like you’ve known him forever, it’s relaxing and he had to go to the same school of ingredient measurements as my mother. (I don’t think my mom ever used a measuring cup, a tablespoon or similar) If the job as “James” becomes available, I’d like an opportunity to audition. Making the meatballs tonight. Along with the white clam sauce. (Mrs Henderson doesn’t eat clams… How did that not come up? We dated for 3 years!)

Right on point as usual with the Sclafani! My kids wanted spaghetti & meatballs last night and I made your original style meatballs from the other video and a quick sauce using the Sclafani crushed tomatoes... Your ragu recipe was on point man. I haven't seen anybody do it with the bread like that for the meatballs, I usually just buy some bread crumbs but I'm going to try that myself keep up the good work brother

I'm glad you enjoyed the ragu. Dry breadcrumbs work great too. If you do use the milk with fresh breadcrumbs make sure to squeeze out the excess. Hope you enjoy it and thanks for liking the videos!

My grandma always measured ingredients with her hands so I was never able to follow her meatball recipe. This video gave me a great starting point to experiment with. Thanks from a fellow Long Islander 🤙🏻

Best dad ever! You are awesome and OMG do I wish I would have come home from school to those kitchen smells. Love my mom more than she knows and her German/Italian food is amazing but holy cow your kids are lucky. I hope they know it. The scent of fresh cooked garlic, basil and oregano. I'd be in heaven. Incidentally if you need a handyman... I can do a lot, tons of tools, table saws, band saw, routers, planer, jointer, drill press, lots of plumbing and electrical tools and experience, a paint sprayer and lumber... I don't take up much space and I even have a couple Canon t2i cameras, a nice laptop... Ya know... Just in case you might need some of that stuff and an extra hand 🤷🏼‍♂️ LOL

I once did a cleansing fast, don't know what I was thinking. I only lasted three days, but during that time I had such strong cravings. And what was it that I craved? Meatballs! And I craved them exactly like you served to your son...in a bowl with sauce. No pasta needed. Heaven.

My mom always made them with beef, pork, and veal (meatloaf too), though it was hard and expensive to get veal so occasionally it was just the beef and pork. Love it! My fave part is adding cheese inside along with the breadcrumbs. I like a little oregano and ricotta in there too. :-)

Like the way you mentioned Sicilian Style. My family is Napolitano but my Grandmother would always make my Grandfather's on the side for Sunday dinner. He loved his Meatballs with Raisins and Pignoli Nuts. Another Gem 💎 I always use the 2 day old bread really means a lot of difference. I hope you and yours had a great and safe weekend. 🤝

Don't know how I tripped into this channel but I love it! If I am trying to show off it will literally take me all Sunday to make a spaghetti or lasagna. Starting with blanching the tomatoes. But in real life we rarely do that. I love the way you show how to cook a meal and still get to watch some of the game! I love the way you say you can do this but you don't have to, this can of whatever will taste great. This is how you can feed your fam and still have a life outside of the kitchen!!! And your folks will be fed an awesome meal.

I learned something new with meatballs today. I don't believe I have stuffed them with mozzarella before but will definitely try it on the next occasion. I've added most of the other ingredients which make for savory meatballs. The instructions are easy and simple to listen to as you're explaining them and I'll need to try the water thing too. Your taste tester seems to love all the foods you make. James is becoming a pro in front of the camera.

I found your channel about 2 weeks ago. Watched a few videos and subscribed, and I'm really appreciating the relaxed family vibe and humor, the expertise, the emphasis on vegetables in many dishes, and the production quality. I'll keep on sharing your videos. Looking forward to your continued success and seeing the channel blow up. I was glad to see you mention the meatballs with raisins and pine nuts. Last year I made the Frankie's 457 Spuntino meatball recipe that had those included, and I didn't know they were Sicilian. It was my first time having those "exotic" kind of meatballs but I loved them and the variety they brought to a classic dish that I make the same way far too often. With channels like Italia Squisita, Not Another Cooking Show, and yours, I hope to branch out and expand my understanding of Italian cooking. Keep the good stuff coming.

Thanks very much! I try to make everything simple with minimal ingredients. I'm actually shooting photos of Sicilian meatballs today for my website. I like them both in red sauce and a white no tomato sauce. Hopefully a video will be up soon too.

Very nice. Again, don't worry about the people that give you a thumb down or criticize your Technique. Especially something like a meatball. There's so many ways to do them. some people say you have to Brown and some people say you don't some people say you add this yet that. Here's what I say, it's your kitchen it's your ingredients your mouth it's your family and it's your stomach so it's yours to cook the way you want to. I got a $20 bill that says not one of the 24 people who thumbs you down could make a meatball this good. If you were local I'd give you ten pounds or so of some Pronghorn backstrap meat from my next hunt. It is an awesome addition to meatballs and sausage. Subscribed.

I have yet to see one of these videos that doesn’t look totally tasty and makes me hungry as I watch it. I have cooked a lot of these dishes for years being that I love Italian-American food, but on pretty much each one, I have learned a way to improve how I do the dish…sometimes it’s a fairly significant change and sometimes it is just a small change, but always it improves how I have done it for years (since I was in my late teens/early 20s…I am now in my early 40s). By far, my favorite cooking channel!

my families origins isn't from Sicily, we are Neapolitan, but every Sunday when my dad would make the gravy, he would always make on large meatball with raisins and pine nuts in it...

Your recipes and presentation are both excellent. You randomly popped up in my feed a couple of months ago, I’ve watched a ton of your videos since. When I make meatballs-for cheese, I use 1/2 C ricotta and maybe 1/4 C fresh Parmesan for 2+ lbs of meat. Next time I’ll switch the ricotta for mozzarella, that sounds better.

Great meatballs for a hero. If no fresh basil I use a little dry or a little Italian seasoning. The bread is really good in the meatballs as well. Found some veal cutlets yesterday. Good treat once in a while.

I’ve been making a similar meatball for years. Pecorino is so nice in them. Lately I’ve been cooking them in my instant pot in marinara and the have turned out perfect. Great recipe

Wow just discovered and subscribed to ya. Your videos r amazing an enjoyable 2 watch. I moved from rockland county ny to the boondocks in pa a couple years ago so we dont have a lot of good italian delis or restraunts here so good pizza or italian sandwichs etc. are hard to come by. So that means i gotta try to make it. Well anyways my suggestion is a good buffalo chicken sandwich, i use to get good ones here in stony point but not any more, tx.

I enjoy your channel bro. Your laidback style, knowledge and easy listening music brings it all together. I learned to cook from 3 awesome ladies; my mom who was Neapolitan, my Aunt Connie who was Sicilian and my buddies mom who was Roman. I learned from a tender age. I miss those days and the women who helped shaped my culinary talents. If anyone on here is near Bayside I recommend Joe's Sicilian Bakery. I used to get my semolina bread there. I'd buy 3 small loaves and eat one on the way home. I guess that's why I got yelled at when I got home. Hahaha. Sclafani brand are simply the best tomatoes. Grown and packed in Jersey. I have used virtually every canned tomato on the market, but Sclafani is the best. I used to buy them at Scatauro when I lived in NY. But now I have to get them from Amazon. I have to buy my Locatelli Romano online also cause I live in the country now where every kind of bread tastes the same just a different shape. Oh well at least I can cook.

I've run out of basil more times than I can count. Thank goodness for my backup: pesto. It's been added to more than a few of my sauces. I have no idea if this is "authentic" or not, but I like it and no one's complained, so I guess it's ok 😂

I figured out to mix everything together except the beef (since the pork won't make tough meatballs no matter how hard you mix) then add the beef as the last thing. It makes the most tender meatballs ever.

Love all your recipes . I make my meatballs with all the same ingredients except i don't use parsley i use basil.Basil works very well.My Calabrese mother always uses basil.

Mozzarella stuffed meatballs! Very cool! ( Someone trained in the French schools would call that breadcrumb/milk mixture a "panade". It's great to add to meatloaf as well!) 😄
