Note to self: put tin foil on the rack below the popcorn. I make a cauliflower oatmeal if y'all want to try I would be honored and humbled. 1 bag frozen cauliflower rice sweetener of choice I use whatever is handy your favorite oatmeal flavorings (cinnamon, maple syrup, brown sugar substitute, basically whatever you like) almond milk heavy cream cook the rice for 8 minutes in the microwave (I don't care what the instructions say trust me 8 minutes) I don't care if you rinse or not, I don't never even thought about that I mean how do you even wash the cauliflower off the cauliflower on a medium heat put some heavy cream and almond milk in a saucepan how much is up to you according to how creamy you like it add the sweetener and flavorings add the rice add more almond and/or cream as needed Cook until you get it to the tenderness, creaminess and texture you like best. I also do grits in the same manner still using the cream and almond milk but with butter, salt, pepper, garlic and cheese of choice (cheddar or gouda work well) add some scampied shrimp and you got shrimp and grits You can do the grits as a casserole by combining the rice, 1/2 cup of sour cream, 1/2 cup of mayo, seasonings, 1/2 cup to 1 cup of cheese of choice. Sprinkle a little cheese on top and bake for 30 minutes in a 400 degree oven. You can do a couple of minutes under the broiler to brown the cheese on top

If you have an instant pot with a dehydrator setting it might speed up the drying process. I was also wondering if a milder cheese like mozzarella would make it taste more like traditional popcorn then add flavorings that you would add to plain popcorn.

If you have two racks in your oven, you could put an empty sheet on the top level and put the cheese one level below so when it pops it’ll hit the top sheet and bounce back onto the lower one 🤞

I read that you can use a custard like base. 1 cup heavy cream, 1 cup almond milk, swerve (or your choice of sweetener) 3-4 egg yolks, and vanilla and you cook it on low heat while it thickens up! -Em

Here is the best tip for making whipped cream by hand. I saw this tip on America's best kitchen. If you move the whisk from side to side instead of a circular movement not only will your hand not be tired, it makes the process faster.😁

Keto means in ketosis, what you eat to get there doesn’t matter. As long as you stay under the threshold of carbs you are in it. You could technically eat 20 net carbs of pure sugar and still be in ketosis. Depending on what kind of “keto” you want to do, that’s when the dietary restrictions come in. Clean keto, dirty keto, lazy keto... it’s endless. We are more “relaxed” with what we eat some of the time, as long as we are in ketosis. Others are way more strict with their ingredients 😊-Em

Your thoughts about advertisers using overweight models? Something we're seeing much more of. I think it's great because it promotes body positivity and shows that people are beautiful in all sizes and shapes. I have friends who think otherwise because they think it promotes positivity for being overweight & that's unhealthy. I suspect these fat-shaming people would fail to same the same about real skinny models who may so thin due to unhealthy anorexic diets also.
