Hey if you like the pasta I tried my own version you might like, instead of feta use a round of Brie, put a quarter of a onion and some garlic in with the tomatoes, and add about a quarter to half a cup of red wine, and use basil as the main herb, the cooking method is the same, and I do add grilled chicken breast to both versions if I am making it as a main meal but I cook the chicken breast separately and shred it before I mix it into the pasta but you could just have the seasoned grilled chicken on the side

I think the second recipe is inspired by a common Mexican street food but is usually done with a fresh cucumber not a pickle so it probably has a very different flavor
