Looking awesome Joe! Yep, keep it simple with beef ribs. I only use Kosher salt, ground pepper corns and coffee grounds (and the German in me makes me us mustard for the binder).

About to give this a try this weekend. I think I will leave a thin layer of fat because I like that grissle. I'm in San Antonio using a Mastebilt charcoal/wood smoker that uses an electric fan. Cooked a lot of meats but never Dino ribs.

Joe, Great video. Very well done. I have been using a Yoder YS640 for years and I have an opportunity get a YS1500. Is there much difference in pellet consumption between the 640 and 1500?

You know, not much. It all depends in the temp you set the 1500 at. Check out the video I did a couple of weeks ago on an overnight brisket. I used like 10lbs of pellets only.

Fun fact - There is a Worcestershire sauce called "W Sauce". It's much thicker and bolder. One of my subscribers turned me onto it. If you like the regular kind, check it out. It's quite tasty. Nice looking ribs sir!

When you’re doing that can you remove the membrane also is there a reason why you’re keeping it?

Basically, it keeps the rack together. If removed, the meat tends to fall completely off the bones.

Chuck ribs are normally a bit shorter. Flavors are the same though.👍🏼

If you like these ribs try beef back ribs smoke for 2 hrs at 275 then wrap for 1 hr then sauce at the very end something sweet. Not as much meat but tons of flavor.
