มีหลายขั้นตอนที่ไม่ถูก แต่ที่สะดุดมากที่สุด เล็บคุณยาวมาก ทำอาหาร ใครเค้าไว้เล็บขนาดนี้ และคงจะมีคนจำพวกที่ว่า แหมๆๆ จ้องแต่จะจับผิด โผล่มาด่าอีก อยากจะบอกไว้ก่อนว่าทำสื่อสาธารณะถ้าไม่รับคำติชมก็พัฒนาไปไม่ได้

เมนูที่1.ฉู่ฉี่ เริ่มต้นจากการเครื่องแกงเครื่องเทศเยอะจัดกลิ่นฉุนเกินแน่นอนโอเคอาจจะเป็นสูตรเฉพาะของทางร้าน การทำปลาแล่บางขนาดนั้นยังไงเนื้อก็แตกแถมยังชุบแห้งใส่น้ำมันแค่นั้นเองหรอเบสิคการทอดปลาแย่มาก มาถึงผัดเครื่องแกงถ้าจะผัดโดยใช้น้ำมันก่อนก็ควรผัดให้เครื่องแกงซักพักนึงให้หายปร่าซักหน่อยหรือจะใช้หัวกะทิผัดให้แตกมันแล้วค่อยๆเติมกะทิทีละน้อยเรื่อยๆ ผัดเครื่องแกงยังไม่ทันหอมก็ปรุงรสซะเต็มที่เลย 2.พล่าปลา ปลาแล่บางไปนะครับถ้าจะลวกปลาน่าจะต้มน้ำให้เยอะกว่านี้ให้จมเนื้อปลาไม่ใช่มากลับไปมาแบบนี้ยังไงเนื้อปลาก็เละครับ ส่วนเรื่องเครื่องยำแล้วแต่ความชอบแต่ละคนทำ แต่ผักใบเขียวอย่างสะระแหน่น่าจะใช้โรยมากกว่ายำรวมเพราะผักจะช้ำ เครื่องมือครัวก็ครัวใช้ให้ถูกต้องด้วยนะครับใส่ชุดเชฟแล้วควรทำงานให้มีประสิทธิภาพกว่านี้ ขอบคุณครับด้วยความเคารพ

Here's the rundown for the curry at least, if it's helpful (to the best of my knowledge)... *Paste:* - Cilantro root - Black & white peppercorns - (unsure of dark brown spice.. toasted cumin? maybe cinnamon or clove?) - Crushed coriander seed - Finger root (chinese ginger) - Shallots - Garlic - Long pepper - Galangal - Lemongrass - Salt - Small dried chilies - Kaffir lime peel - Soaked large dried chilies *Curry:* - Fry paste in small amount of oil - Coconut cream/milk - Palm sugar - Fish sauce - Kaffir lime leaves (sliced thin) - Kaffir lime zest - Green peppercorns - Basil (sliced thin) - Slice fresh red chili - Drizzle of coconut cream

I live in Thailand, in a sea resort area, and have spent a lot of time in Japan as well. Quality of fish and variety in both places are very similar but you're bang on the money with skills, the Thais tend to hack and slash and do not keep their blades sharp whereas in Japan the blades are kept stupid sharp and the skills are among the very best.
