However, even though you give the full recipe in your notes section, I think the video would be enhanced by listing the ingredients and their amounts as you go through the cooking exercise. Thailand's cuisine is internationally famous. Thank you for making it simple to cook.

Honey I love your cooking segments and Adam's videos. I work from morning to night. I do not like the summer in Perth. I work from 4.00am or 4.30am till 11.00am. Then i go out from 3.00pm till about 7.30pm. Have my shower. Have my dinner which could be either KFC or Mac Donalds. Brush my teeth and then sit down in my study, till about 1.00am watching videos of Thailand.

I was taught by Thai mum in issan to first cook paste in oil low heat, then add coconut milk and cream combo

That is another way some people put oil in, but it’s not necessary to put extra oil in when you can slowly cook it with the coconut and the coconut itself will break an oil this is traditional way

Hmmm wonder if youd have a recipe. I used to visit a thai place in boston. They had a dish called crying tiger. It was slices of beef, oriental eggplant, green bean, pepper and wild ginger. Served with white rice. I loved it. It was very spicy. My girlfriend at the time would banish me to the other room cause the smell made her eyes water from the spiciness. Another was gai grob pad thai. It was a delicious fried chicken slices with an amazing sweet sauce. Always wanted to learn the recipes for them. I havent been up there for years so I couldnt get the recipe off the chef.

I prefer the larger eggplants over the smaller ones. They taste absolutely delicious. I saw Sai at Pokhara International Airport in Nepal last year, but I couldn't say hi because I'm a bit of an introvert.
