What's in the 3 woks is called "Pad Krapow." Literally translated is 'stir fried Thai basil.' The dish is specifically Pad Krapow Moo which "Moo" is pork in Thai. The Thai basil is the main aromatic and herb of the dish while everything else works along with it. You can also make it with ground chicken or beef.

No disrespect but after watching this video for several minutes, I honestly don't think I could eat street food in Thailand. They have no regard for cleanliness.
