I just wanted to mention that the gentleman at the start of this video, skill and control of those very sharp tools are amazing. These venders are every bit as professional as people working in 5 star restaurants. I love the rhythm of the chef in the blue and shirt yellow apron. He has his own style and grace. All the people in this video from beginning to end are true Chefs.
