8:42 looks like a khanom jeen (fermented rice noodle) platter. Each region has its own local curries to go with it, but this curry looks like nam ngiao (bombax ceiba; red cotton flower). It’s an indigenous curry usually eaten with the fermented rice noodles in the north and, I believe, parts of myanmar. The flower is called ดอกงิ้ว in Thai. Maybe that’ll help when you try to make it once you get home.
