One of the things I absolutely adore about Chef Jean-Pierre is him making mistakes. When he does that he removes the feeling of being pressured on doing everything perfectly from the viewer. He creates such a comfortable atmosphere in his videos and personally, that is greatly appreciated.

Chef I know we aren't supposed to stuff the turkey anymore but I wish you would do an old school Thanksgiving turkey with real stuffing like I remember from my childhood. Stuffing was the best part and doing it outside the turkey just isn't the same. If you do it that way you really can't call it stuffing because it isn't. If anybody else here is as old as me and agrees please lobby Chef to show us the old school turkey stuffing method. It was Amazing!

There is a fix for that. You can enhance the dressing in a pan outside of the bird by overlaying slightly roasted (cooked) turkey parts on the dressing and foil it. Cook in the oven covered until the temp comes up to 165. That way you get drippings off the meat parts, giblets too if you like. I've done that for years with left-over dressing that couldn't fit into the bird.

The best part about this channel is you don't edit to make everything perfect. The butter wasn't warm enough, but we got to see the texture of the butter that's not warm enough and warm just right. It's actually very helpful for some of us who are a little neurotic in the kitchen.

I’m absolutely in love with this channel & am head-over-heels in love with Chef John-Pierre….not with the 🦃 because the ONLY warm spice that I like, and in minuscule amounts, is cinnamon & I certainly am not going any where near maple syrup on anything except for pancakes & French toast - LMBO!! But, I’m learning so, so much about dishes, flavors that my husband & family would thoroughly enjoy. I alsolove that he doesn’t edit his mistakes & gives a honest presentation on how to prepare each dish & what might go wrong during the preparations. My Mom told me a funny story about a ham she cooked for Christmas. I was around 4 years old & while she was busy feeding my younger brother in his high chair, I had all of a sudden disappeared from the table. After asking my clueless dad, my older brother & sister if they had even noticed my disappearance, she heard a small step stool being dragged across the kitchen floor & running water from the kitchen faucet. When she walked into the kitchen, she found me lying on the counter with all of my body, except for my legs/feet, hanging over into the sink. I was holding the dish soap - upside down - with my little hands trying to pour it onto my piece of ham which was laying underneath the running water. When she asked me what in the world would possess me to go through all of that trouble to thoroughly wash my piece of ham, I told her that I didn’t like the “bad tooth taste” & was hoping to wash it off. My mom & dad were laughing hysterically when they figured it that I was referring to CLOVE spice. She still used cloves & pineapples on her baked ham, but she would cut 1/4 off of the end & would bake it first…just for me & for other guests (who didn’t like the “bad tooth taste” )who might have joined us as well. I can’t tell the story as well as she could, as she would start laughing again. My sweet Mama was a simple cook & there’s absolutely nothing wrong with that. I’d put her Thanksgiving meals (Turkey, cornbread & sage dressing, biscuit dumplings, gravy from the Turkey drippings (NEVER added the gizzard, neck, etc. - again, because the consistency would humbly & seriously make me gag. The same reaction to liver, etc.) Her biscuits were LEGEND!!! Naturally she’d never measure a single ingredient. Gosh - I still miss her so horribly much. 😢😢😢 I’m married to a former chef - who can cook - have mercy - my Hubs can cook!!!! However, his feelings can be a tiny bit fragile even after 20 years. Sadly, he married a sweet country girl with a naive & picky palate. I guess he married me for my kind heart - thank goodness. At the time, that was about all I had going for me - FOTFLMBO!!!!! I cannot help it. I like what I like & there are some new foods/flavors that I will try. I think that it’s mainly related to the smell & consistency of the food. So sorry for the long post. This just triggered such happy memories of my Mama & her challenges of having a picky eater for a daughter. May God richly bless each & everyone of you ALL!! ❤️🙏🏼🙏🏼❤️ MERRY CHRISTMAS!!

I did a turkey like you showed in the video and it was amazingly moist and tender. I then put the presentation on a serving plater with all the pieces arranged like you showed in the video. i cooked Chef Jeans 2021 Turkey video Turkey for Thanksgiving & Christmas last year... im never cooking a Turkey any other way ever again lol. i've cooked Gordons Turkey, a couple of Chef Johns from Food Wishes Turkey, and i've cooked a few other Chefs Turkeys.... none of them are as simple, gorgeous, and most importantly delicious as Chef Jean-Pierre. i don't blow smoke when it comes to recipes, Chef Jean has some other recipes which i think there are better ways to do it.. but not when it comes to a holiday Turkey, Chef Jean has the best recipe.

@@ChefJeanPierre hey chef love the recipe aside from you stuffing the turkey it doesn't add flavor like most think and it will dry out the exterior breast meat because it cooks fast than interior breast. You want the cavity to have heat going into it to cook it as fast as possible. If you want the flavor that you get from stuffing add the stuff to the roasting pan. And a brine does make a difference.

Hey Lisette, so sorry for your loss, I've seen over the past couple of years the relationship you have with your puppies, love and caring. I was also devastated when i lost Maizey Mae last year. I got her when i retired and was with her 24/7 for 13 years. I still think of her every minute of every day, but my thoughts are full of love and great memories of her. I made your recipe as promised and it was absolutely incredible. My home had the aromas of Orange, Vanilla and Maple from basement to attic. Chef Jean-Pierre like always a great demonstration and presentation of Turkey. We used to cook hundreds of portions for banquets at the Hotels I was working at. We boned and rolled the legs, tied them then with herbs and butter and wrapped in tin foil. Wrapped also the Breasts and done the same way with the tin foil. Then put in the rational oven on " over-night roasting programme". Then once cooked let them go cold overnight, then slicing them the following day. Reheating at oven steam temperature of 80c. Keep on doing a great job 🙂

Nice method. One thing I see often is people trying to slice meats with serrated blades which tears the fiber vs. cut them clean. Another thing I notice is folks will try to use a chefs knife to slice up their turkey which makes it more difficult. The boning knife is for disassembly of the breast, turkey parts and the smaller parts such as the wings, thighs and legs. The slicing knife as shown here, is for slicing the breast meat into plate sized portions. And of course, the knifes used need to be super sharp which makes everything easier.

It is unfortunate that this video came out after Canadian Thanksgiving. I was born in Ontario and I now live in Michigan and I would've loved to have made this and tell the Americans that this is a traditional, Canadian, Thanksgiving turkey. The maple syrup in the glaze would've sealed the deal! My American Mom n Aunt cook Thanksgiving for the U.S. family. I'm responsible for the cheesecakes.

Such a gift, this channel. The progression of the turkey over 3 years. . . Its like having a relative you can call up at any time and get advice from. I watched all 3 turkey videos and went in the kitchen and practiced on a chicken, yesterday. Best chicken I've ever roasted! The galf cup of gravy i made was from another world. I'm going to go with stuffed turkey breast this year, though. That technique looks like such a gem. Chef stuck it in the mix for a reason!

Happy Thanksgiving Chef. A beautiful recipe (as usual). Thank you for this video and all your (TG or not) videos. They are "Amazing". One thing a lot of people forget (especially those of us that love the dark meat). Under that Turkey carcass are two Oysters (I call them that) that are dark meat treasures. My family fights over them. If your Turkey is large enough, you could split them in two so more people can have a piece. Thakbyou again Chef for all that you do.

I myself love to cook and everything i know came from me watching my mom as a kid but it's nice to see someone that inspires and show how fun cooking can be and the satisfaction you get when you create something special and people are enjoying what you made...so much better than wasting money on crap food. Keep up the good work :) you need to make more indian dishes though lol.

Love this chef, but I prefer stuffing that's cooked in the turkey. We make a huge batch. Family usually has 40 to 50 guests. Whatever doesn't fit in the bird goes into a pan. The stuffing from the bird gets devoured first. Can't wait to try the maple butter rub.

Just made a turkey this morning, our standard way to butter the turkey is take 3/4 of a package of maple bacon and wrap it all around the bird. We make homemade stuffing and that does have lots of butter in it along with celery, onions, breadcrumbs and fresh herbs. after the first 2 hours I baste it then once every hour. The bacon kind of auto bastes it the whole time as well. We use a rectangular roasting pan with a lid and cook for the last 15-20 minutes with the lid off the brown it. Will have to try this recipe though, off to go find your gravy.
